Millet Khichdi: A Wholesome One-Pot Meal

Millet khichdi is a nutritious and comforting one-pot meal that combines the goodness of millets, lentils, and vegetables. Ingredients:

  • 1/2 cup mixed millets (a combination of foxtail, little, and barnyard millets)

  • 1 small tomato, chopped
  • 1/4 cup mixed vegetables (carrots, peas, beans, etc.), chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish
  • Ghee or oil for cooking

Method:

  1. Rinse the mixed millets and yellow moong dal under running water. Soak them in water for 30 minutes.
  2. Heat ghee or oil in a pressure cooker or large pot. Add the cumin seeds and let them splutter.
  3. Add the chopped onions, minced garlic, grated ginger, and green chili (if using). Saute until the onions turn translucent.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Add the chopped vegetables, turmeric powder, garam masala, and salt. Mix well and cook for 2-3 minutes.
  6. Drain the water from the soaked millets and dal. Add them to the cooker or pot and mix with the vegetables.
  7. Add 2 cups of water and mix well. Adjust the salt and spices according to your taste.
  8. Close the pressure cooker lid and cook for 3-4 whistles on medium heat. If using a pot, cover with a lid and cook until the millets and dal are soft and well-cooked.
  9. Once the pressure is released, open the lid and give the khichdi a gentle stir.
  10. Garnish with fresh coriander leaves and serve hot with yogurt, pickle, or papad.
