Millet Pulav: Flavorful and Nutritious One-Pot Meal

Millet pulav is a wholesome and flavorful one-pot meal that combines the goodness of millets with aromatic spices and vegetables. This nutritious dish is easy to prepare and perfect for a quick weekday lunch or dinner. Ingredients:

  • 1 cup mixed millets (such as foxtail, little, and barnyard millets)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 1/2 cup green peas
  • 2-3 green chilies, slit lengthwise
  • 1-inch piece ginger, grated
  • 2-3 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Method:

  1. Rinse the mixed millets under running water and soak them in water for 30 minutes. After soaking, drain the water and set aside.
  2. Heat oil in a pressure cooker or a deep pan. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add grated ginger, minced garlic, and slit green chilies. Sauté for a minute until the raw aroma disappears.
  5. Add chopped tomatoes and cook until they turn soft and mushy.
  6. Add diced carrots, potatoes, and green peas. Mix well and cook for a few minutes.
  7. Add soaked millets to the pan and sauté for a couple of minutes.
  8. Add garam masala, turmeric powder, and salt to taste. Mix well to coat the millets and vegetables with the spices.
  9. Pour water into the pan and stir to combine everything evenly.
  10. Cover the pressure cooker with its lid or cover the pan with a tight-fitting lid. Cook on medium heat for 2 whistles in a pressure cooker or simmer for 15-20 minutes on a stovetop until the millets are cooked and water is absorbed.
  11. Once done, switch off the heat and let the pressure release naturally. Fluff the millet pulav gently with a fork.
  12. Garnish with fresh coriander leaves and serve hot with lemon wedges.
