Millet pulav is a wholesome and flavorful one-pot meal that combines the goodness of millets with aromatic spices and vegetables. - 2 cups water

Method:
- Rinse the mixed millets under running water and soak them in water for 30 minutes. After soaking, drain the water and set aside.
- Heat oil in a pressure cooker or a deep pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add grated ginger, minced garlic, and slit green chilies. Sauté for a minute until the raw aroma disappears.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add diced carrots, potatoes, and green peas. Mix well and cook for a few minutes.
- Add soaked millets to the pan and sauté for a couple of minutes.

- Cover the pressure cooker with its lid or cover the pan with a tight-fitting lid. Cook on medium heat for 2 whistles in a pressure cooker or simmer for 15-20 minutes on a stovetop until the millets are cooked and water is absorbed.
- Once done, switch off the heat and let the pressure release naturally. Fluff the millet pulav gently with a fork.
- Garnish with fresh coriander leaves and serve hot with lemon wedges.
